The wines and the people who carefully selected the wines played an important role already from right in the beginning (1990). We had the pleasure of making a balanced selection of wines together with various sommeliers in order for each customer to find his liking.
Our wine list has carefully been increased with French wines and wines from all over the world. Our sommeliers can always make suggestions regarding your choice.
At regular intervals we have suggested wine lists, where a particular theme is suggested: summer wines, organic wines or wines from a particular region or country. Something for the explorers!
With a good wine there should be an appropriate dish. This was the basic idea; behind this idea is a whole process that we have refined over the years. The most important elements are: the acids, sugars, bitter, salt and umani.
Every time we launch a new menu, we select the wines with the sommelier and our wine merchants. After tasting the wine, we decide which dish can be served with the wine. Subsequently the dish is prepared and the wine gets tasted. The dish eventually gets adapted and only then does it appear on the menu. The harmony between the wine and the dish is very important to us; if in harmony, we obtain a very pleasant palette and you can enjoy more of your food and drink.
